My 03 Suburban stops running on the highway while driving--what could be cause?

This has only happened while driving at high altitude in the Rocky Mtns. The instrument cluster lights go out and gauges go down before it happens. The car kind of chugs along slowing down then gaining some speed, losing and gaining until we just pull over or it stops. We've been able to roll to the side of the road to stop safely. After car rests 5 minutes, it starts again.
