How to change thermostats?

how do you know it's the thermostat? is the coolant level full? (must be FULL to get proper heat). where is the temperature gauge hand/needle at when the engine is at normal operating temperature? are both heater core hoses VERY HOT to try and hold with your hands at normal operating temperature? which engine, 2.4L or 3.0L?
