What is your question?
So I have a Service Stabilitrak warning on my car... I went to the GM dealer and they checked it out. Right rear hub bearing needs to be replaced. I just recently replaced my left one, so I got unlucky here. My question is, how big of a concern is this? I don't quite understand Stabilitrak and what the impact is here. I was in the middle of a road trip when it came up and drove ~750 miles on it and didn't notice anything. I ask because I was planning to go on a 2.5k mile road trip soon. I have a 2013 Chevy Malibu LT.

Hello, fix your vehicle before your road trip. Wheel hubs and bearings can be condemned due to a signal issue for the Stabilitrak system, but could also be worn causing play in the wheel -- which can also cause a signal issue. Either way, Stabilitrak is a system that provides anti-lock brake functionality and vehicle stability control to ensure safe driving. A fault in that system --- let alone a possible loose wheel! -- is enough reason to make repairs before a trip.
