Engine stalls after warming up

(1990 Mercedes-Benz 300SL)

It's been sitting for a few years however I covered all the basics to get it running, fluids, battery etc, haven't replaced any parts yet except for the battery, the issue I'm having is that it starts and runs fine until it warms up then just stalls out any information would be helpful. I'm leaning towards a sensor issue but this model doesn't seem to have many.

Engine stalling is typically from engine performance concerns. Assuming you can crank it back up and that electrical is there, it is most likely engine performance concerns -- lack of fuel, lack of spark, lack of air or too much air, or an exhaust restriction that chokes the engine. Too hard to tell without diving in and seeing what is missing when the stall occurs.
