Hello, my initial guess is that the engine cooling fan may not be turning on as needed while driving. However, when your air conditioning system is on - the condenser fan operates...which is essentially the same thing - a fan blowing through the condenser (and radiator). Check the function of your cooling fan first - when your engine temperature is hot - and the AC is off, does the fan come on? If not, there could be a concern with the mechanisms that turn the fan on - not the fan itself (as it likely operates with the AC on...turn the AC on and see that the fan does come on then...). There are many reasons your engine could overheat, keep in mind that I'm just thinking logically based off of the information you shared.
