Ok so when I turn my heater or AC on there's a grinding sound plus it bogs the motor down that if I come to a complete stop it sounds like it's gonna die

On your 2001 Toyota Echo a grinding sound combined with the engine bogging down when the AC or heater is turned on points to a couple of likely culprits. Most likely one being a failing or seized AC compressor, as a compressor that is struggling or beginning to lock up will put a significant load on the engine and can produce a grinding or rattling noise. Since both the AC and heater share the blower motor system, a failing blower motor with worn bearings could also potentially be the source of the grinding sound and it is possible that the extra electrical load is bogging down the engine. On a vehicle of this age either of these components could be worn enough to cause exactly what you're describing, and a seized AC compressor in particular should be addressed promptly as it can eventually cause the serpentine belt to fail and leave you stranded. I’d recommend having a qualified shop inspect both the AC compressor and blower motor to pinpoint the exact source.
