Why does my low coolant light come on even though there is plenty of coolant?

I was told it was a wiring harness that goes around the bottom of the radiator. It rubs the radiator and causes bare wire and corrosion. If not in might be the sensor on the passenger side of the radiator. Mine is doing the same thing.
