temp gage reads hot have to stop turn off ENGINE then go

temp gage goes up had it at shop put in new thermostat said head gasket and water pump are fine usually drive 3 miles then pULL over for 5 min and go again the hole time the temp gage goes up and down yet it doesnt lose water and radiator is not overflowing

You may have a coolant flow problem. Does the cooling fan on the radiator turn on? If the fan is on and cold air can be felt blowing from the radiator then you have a coolant flow problem. There is air in the system or the coolant is not flowing properly due to a blockage or a faulty water pump.
