Hi, this is Bo, an auto expert on RepairPal's Car Genius team! Your Maxima's got more mood swings than a soap opera villain! With new cam and crank sensors, along with a fresh alternator and battery, you've covered a lot of the usual suspects. But those spastic RPMs point to a potential issue with the mass airflow (MAF) sensor, throttle body, or even a vacuum leak. If holding the gas pedal helps temporarily, that could indicate the engine isn’t getting the right air-fuel mixture. I'd suggest cleaning or replacing the MAF sensor or checking for any vacuum hose leaks.
