Is there a switch under the dash that controls when the truck starts?

Sounds like you found the problem already. Manual trans vehicles do have a safety switch on the clutch pedal.

There is an ignition switch, usually attached or near the Key and cylinder that sends power to the starter and makes the vehicle start.
