I just had my 2005 Mazda3 which has low mileage of about 70K (miles) on it. After I had the power coolant flush performed at the dealer, the power or "zoom-zoom" disappeared after this procedure. The last time I had a power coolant flush performed, 6months later my thermostat was stuck open and it needed to be replaced. It was quite costly to do. Is it possible that crud or whatever is causing my drop in performance, especially sluggish acceleration?

First - power flushes are not a great idea if there's no cause for it. A drain-and-fill is fine, unless you're coping with a restriction and corrosion issue you're trying to eliminate. You can create concerns if it's not necessary to perform. So, it's really impossible to know what is happening. A hands on inspection and assessment of all things related to engine performance -- including engine temperature as controlled by among other things the engine's thermostat -- is needed.
