Hi, this is Bo, an auto expert on RepairPal's Car Genius team! After swapping the thermostat, your Jeep Grand Cherokee blowing smoke and showing a low coolant alert suggests a leak. It might be as simple as a loose hose clamp or an improperly sealed thermostat housing—common after a repair like this. Check for coolant pooling under the vehicle or around the thermostat area. Another possibility is that air got trapped in the cooling system during the refill, causing it to overheat and spit out coolant, leading to that steamy exit. Make sure the system is properly bled, and top off the coolant once things are tightened up.
