When changing out the blend doors, I know you have to pull the dash out. Can changing the blend doors possibly make coolant low sensor to go off if dash and components are not put back properly?
How long has your 2003 Jeep Grand Cherokee had this problem?

I cannot think of an easy correlation between accessing the dash and causing a low coolant indicator to come on. That information comes from under the hood and could not be related to "connection" in the dash area. I would likely approach this concern separately - first by checking coolant level and then the related sensor components.
