2001 jeep grand cherokee died today. Started stalling while at stops and didn't want to stay idling after turning it off and starting it back. But finally I pushed the gas and brake and was able to get it going. As I got down the interstate, it started a knocking noise, then the temperature gauge started going down a little then back up a little then before I knew it, the Jeep made a poof noise and died. Its on the side of the road now. It's had low coolant alert for the last month and I filled with antifreeze and/or water since then it's December so it's cold outside but this all happened after driving it for 45 miles today What do you think is wrong with it

The truth is, you've had a warning issue for quite some time with the low coolant situation. No matter what, it needed to be corrected, not just by adding coolant.
