We keep having to replace the Catalic Converter due to engine running rich. Have replaced egr valve, oxgyen sensor, vacuum leak, fuel injection system. Possibly other stuff can't remember now, but truck is still stalling. What do you think it could be?

Wow, that's a lot of stuff to replace and still have a problem. First of all you need to find another shop that is capable of diagnosing this problem without sending you to the poor house, I don't want to hear about RepairPal users needing a bailout from the government! Questions: Has all this work been done at the request of one shop? Is the Check Engine Light on? If so, what codes are stored? When does it stall? How does it run otherwise?
if your fuel is running rich everytime, its probably not one of the things you replaced. You got dooped at the garage and maybe for what you paid you should file suit. Usually the lean fuel mixture like in your situation could be caused by the fuel pump.
I am having the exact same problem with my 96 GMC 5.7. It will start cold, run perfect for about 10 or 15 min then once it warms up it starts running very bad, Backfires when you give it gas then eventually dies. After letting it set for about 10 to 15 min. It will restart easily. But not until it cools off again. Parts replaced and thrown at it with no sign of improvement: plugs, wires, distributor cap, rotor, cam shaft position sensor, crank shaft position sensor, coil packs, coolent temp sensor. fuel pump, EGR, Ignition control modual. It does not have cats as it is an after market exhaust and cats have been removed. Fuel pressure guage reads 60 psi, What is left?
