I've been dealing with this problem for months. When I park my car and walk away, the headlights will be off. At some point after that, my headlights will turn on and if I don't catch it, I'll return to a dead battery. When this happens, the only way to get the headlights to turn off is to open the hood and remove the fuses for the lights. This almost exclusively happens when it's raining. I have a 2003 GMC Envoy XL.
What makes this problem better or worse?

Hello, that's quite a concern - sounds like an electrical issue, especially if it is exacerbated by the rain. I'd be looking at a possible water leak near an electrical box - perhaps under the dash. Or, I'd look at the headlight switch and wiring connector for a short or melted wiring and wiring connector. All a guess, but definitely - with a problem like this occurring, some investigation will reveal something noticable.
