My mechanic says that my engine is toast, and needs replacing. Says that their is coolant in my oil "which their wasn't when I took it in" and all kinds of other catastrophic issues, most likely due to hydro-locking. Is this possible, or is he just full of s--t? Please help!!!!

hydro locking is liquid in the combustion chamber on the compression stroke. a engine can not compress liquid, can this damage a motor? yes. Is the motor damaged because its hydro locked? first you have to get the liquid out of the motor then try to start it. second find out what the liquid is that's in the chamber. injector stuck open, coolant, excessive oil.
There are a couple of issues that can cause a 6.0 to hydrolock. First is a bad egr cooler. Second is bad head gasket. You need to have someone check it out for you. Either is very expensive
