After truck feels like it has stalled, I pump the accelerator several times and it starts right up. It occurs more frequently in hot weather and when the diesel tank is lower on fuel. I had the fuel filter changed and it helped for a short period but now it is doing it more often.

Since it happens when the fuel is lower, and the fuel filter helped, you may want to take a look inside the tank. Hot and humid combined with 18 years of use and a corrosive liquid can do a lot to the inside of a fuel tank. You may have rust and/or sludge built up inside the tank. Also, water in the tank from humidity and temperature fluctuations in the Little Rock area is very possible.
