Not go over about 2500 rpm unless pushed to the floor but the pedal does seem to set pretty low

Without seeing the vehicle, and if there is no check engine light, I would start with maintenance items first. Change the fuel filter, Air Cleaner and check the spark plugs. These items don't have sensors directly monitoring their efficiency. You can usually get a much better diagnostic taking your vehicle into a shop and having it checked over. Hope this helps some.
