When I drive it once in a while it over doesn’t overheat it gets hot when I turn the defroster on heat it doesn’t raise the temperature gage at all when I shut the engine off sometimes it gurgles
What makes this problem better or worse?

A cooling system concern appears to be present. Using a suitable diagnostic tool capable of monitoring engine temperature as read by the engine coolant temperature sensor, you'll want to watch the temperature of the coolant from a cold start until your vehicle reaches operating temperature -- or at least it should reach operating temperature. If it does not, and the hoses do not feel super hot to the touch (use extreme caution here to not burn yourself!), then you could have a thermostat sticking open that requires repair. If it gets hot and the sensor is not reading hot, then you could have a sensor concern. If it gets hot and the sensor shows it's hot, then it'll be about checking for air pockets in the cooling system perhaps, or maybe some kind of internal engine coolant leak. Does your coolant in your coolant reservoir smell like exhaust fumes? If so, it could be evidence that you have hydrocarbons in your coolant from some kind of internal engine cooling system breach.
