Your vehicle may have severe internal engine damage. An engine driven without coolant for any number of miles can overheat very quickly. After re-filling the water/coolant, does the level stay constant? Or does it disappear quickly? Unless the water/coolant is escaping through and obvious leak (hose, from the radiator, etc.) and it is disappearing while driving, you will have to dig deeper into the engine in order to find the cause. Check your oil for milky residue or signs of water. It may be just a blown head gasket, or something more severe.
