Went to take off and it wouldn't sounds like something is spinning underneath but isn't catching to make the car go. What could be wrong? Rear end? Transmission?

If you have a clutch, it could be worn out, if you have an automatic transmission, it may need some work.

I have to assume that this is a manaul transmission? I have seen the differential pinion teeth strip off the ring gear in one Cobra, but it was driven very hard. It might be easy to lift the rear end of the vehicle and set on jack stands to observe what happens when it is engaged into gear.
