Why does my low coolant light come on even though there is plenty of coolant?

(1999 Pontiac Grand Prix)
in Manhattan, KS on September 09, 2016
The light only comes on when I first start up, then goes off, but sometimes comes back on after I've driven for over 30 minutes.

I was told it was a wiring harness that goes around the bottom of the radiator. It rubs the radiator and causes bare wire and corrosion. If not in might be the sensor on the passenger side of the radiator. Mine is doing the same thing.
