1998 Ford Escort Question: won't stay started

It sounds as if you have either an air flow issue, or a fuel supply issue. You could have too much unmetered air getting into the intake, which can stall you out. Look for a cracked or disconnected air hose or air filter box. Or, look for a disconnected or broken vacuum hose.
Beyond that, you will need to get a test, focusing on those items and base fuel pressure and bleed down. Best of luck!

thanks I'll check out air flow and vacuum hoses and also if you hold gas pedal down it will stay started but surges and when you let off will die

Exactly; when you increase fuel with your pedal, the abundance of air entering your intake becomes less of an issue. It's when you have a majority of air verses fuel that you stall.
