When I'm just going cruising speeds (whether it's 30 or 65) as I left off the accelerator, if I barely push it back down to either keep speed or speed up (without downshift take off, that works fine) it has sort of a lack of go? If that makes sense. The truck kinda sputters (not a jerking but you can kinda hear and feel it) like it don't wanna go faster unless I further press accelerator and downshift to take off.

Check for dirty throttle plates, and clean.

Yes the throttle plate might be restricted because of build up. Use some carb cleaner and a clean rag, and clean plate and mating surfaces.

Cleaned throttle completely. No luck :/ helped some but not fully. Anything else to try?

You might have the intake smoked, I have had the plastic plenum, upper intakes, be cracked on the under side and cause vacuum leaks on the 5.7 Hemi.
