2007 Pontiac Grand Prix Question: What would cause my fans not to kick on when my car gets hot??

My main belt broke and I was told it was due to my water pump going out causing it to lock up. I changed the water pump and belt but now my car runs hot sometimes and I've noticed the fans aren't kicking on unless u have the air on. Would this some how be connect or am I looking at more than one problem??

Make SURE the system is FULL of coolant. Run engine with AC off until fans come on or it shows it is hot.
May take 30 min. Did it run hot when sitting and running before?

could be coolant sensor or relay issues or low on coolant

Switch/sensor still unplugged? A/C may control fans seperately.
