makes a air spitting noise as you accelarate, getting worse, we think it is the exhaust donut behind the engine, can we replace this ourselves, if so how?

Masterthis old of a car, the bolts may break trying to release them. that is, if you are correct. they use to burn up the air pump check valve from the cat being clogged and all the exhaust being r routed to the air pump.
have it checked by a shop to confirm.
can you do it yourself?? yes but be ready for issues from the age of the car.
