My girlfriend was driving her van with no coolant in the radiator. Her temperature gauge inside the van never went above half way

    The problem with this is the coolant temperature sensor does not detect air temperature or steam, it only detects liquid. If the coolant level is below the sensor it will not read an overheated condition.
