2006 BMW 325i Question: how hard is it to replace the A. C. core ?

The entire dash has to be removed, to replace the Evaporator Core. For a repair shop to replace it, the estimator shows 14 hours to replace. For a DIYer, figure a long weekend or more!
Also when done, the a/c system needs to be evacuated and recharged.
