What does it mean when my my RPM seems like it's working to hard? For example, if my going 40 - 50 MPH, it feels like something is skipping then pulling like it working hard, and the RPM is up to 5 or 6. Then after I drive for more then 30 mins straight, the car cuts off.

Sounds like your transmission is on "limp-in mode" which means that it locked in 2nd gear due to a internal transmission or electrical issue. Drving the vehicle for 30 minutes at 5 to 6000 rpm can severely damage your engine. If the engine was cutting in and out you were likely operating at an rpm where fuel and ignition is cut off by the Powertrain Control Module (PCM) due to excessive rpm. I advise you have a qualified dealership or technician diagnose your vehicle.
