What causes Tahoe to stall sometimes after it has been running awhile. Let it set for a few minutes, then it starts right up.?

It could be many different things like the MAF sensor, or a cylinder misfire, the easiest way to find out was wrong is to get a diagnostic autozone does this for free.

Customer Concern: The engine will stall at idle when put in gear or coming to a stop.
Tests/Procedures: 1. Check the resistance of the pickup. Specification on the coil is 900 ohms +/- 200 ohms.

    2. If the resistance tests OK, check the pickup coil output during a good cranking speed. It has to be more than 700mV AC.

    2. If the resistance is out of specification, replace the pickup coil. If the output voltage is low, replace the distributor shaft.
    Potential Causes: Distributor Shaft
    Fuel Pump
    Pick-Up Coil
